There are some pretty good vegan Parmesan alternatives on the market. One of our favourites is Follow Your Heart (which features in a post about my favourite dairy free alternatives here), which definitely hits all the right notes. One of my resolutions for 2018 was to eat less processed foods and to make more of my own alternatives. Historically I have posted recipes for raw vegan cheese and a Camembert substitute, so this time round I thought I’d try my hand at making a Parmesan equivalent. Using Nutritional Yeast, or Nooch, which is fortified with B12 will ensure that you are getting the benefit of a supplement in your diet.
I would add the salt to taste as Nooch can be quite brackish and you want a more nutty flavour to your ‘cheese’. Herbs can also be added depending on what you have available. I prefer an Italian dried mix to give it a more savoury, authentic tang. The fact that no soaking of nuts or cooking is required make this so simple to make, and economical too. Sprinkle liberally over pasta, or even on your toast.
Homemade Vegan Parmesan
1 cup of Walnuts
1 cup of Nutritional Yeast
1/2 tsp Sea Salt
1 tbsp of Dried Herbs
1 tsp Garlic Granules
- Using the S-blade in a food processor pulse all the dry ingredients to a desired consistency. It took around 10 to 15 seconds in my own.
- Store in an airtight jar or container and use as and when required.
